Overview
The syllabus for culinary arts students in Malaysia covers both theoretical and practical training in basic cooking techniques, food safety, kitchen management, and preparation of various local and international dishes.
Core Modules & Subjects
Culinary Basics & Food Safety: Personal and kitchen hygiene, sanitation, knife skills, and safe use of kitchen equipment.
Hot Kitchen: Main cooking techniques such as boiling, sautéing, roasting, and preparing protein-based main courses.
Garde Manger (Cold Kitchen): Preparation of cold dishes, salads, appetizers, and food presentation.
Pastry & Bakery: Fundamentals of bread, cakes, pastries, cookies, and desserts.
Cost & Menu Management: Menu planning, raw material costing, and waste control.
Food Nutrition: Understanding nutrients, calories, and healthy food preparation.
Levels of Study
Certificate (SKM / Vocational College): Focused on practical skills and daily kitchen operations.
Diploma: Adds knowledge in management, kitchen supervision, advanced menu planning, and industry training (internships in hotels or major restaurants).
Bachelor’s Degree: Emphasis on higher-level management, culinary business, food research, and entrepreneurship.
Entry Requirements
SKM / TVET: 90% practical kitchen training, minimal written exams. Suitable for PT3/SPM leavers, even without credits.
Diploma in Culinary Arts: 60% practical, 40% theory (food costing, marketing, nutrition, restaurant management). Requires minimum 3 credits in SPM. Duration: 2–3 years including internship.
Bachelor’s Degree: Focused on advanced management, culinary entrepreneurship, and food innovation.
